There are so many awesome fruits available to us at this time of the year. Let?s be sure to take advantage of that and not only eat several a day, but put some in our freezer for when they are not so easily accessible. I?m no expert when it comes to canning fruits, but freezing is easy and works well. Mainly what you need to do is wash them and then be careful to dry the fruit thoroughly before freezing it. Berries of all kinds are very high in vitamins, minerals and antioxidants, and they can take freezing exceptionally well. For those of you who are unfamiliar with antioxidants, these are particles that bond with free radicals. Free radicals accumulate in our bodies from many sources, pollutants in the air that we breathe, processed foods, rigorous physical exercise, to name a few. They have been linked to many diseases and are best kept in check. Also, peaches, plums and pears are great to freeze, even if they are a little more work to put up. All of these fruits are so worth the effort, especially in the dead of winter when fresh fruit is overpriced and really not that tasty. Melons, unfortunately, do not freeze well, and I suspect that is because they contain so much water. There is something about having a high water content that changes its flavor and texture once frozen. I suppose that just means we have to eat as much as we can right now, while it?s fresh and plentiful.
